Spicy Squid Salad (Yam plah meuk)

| 2-3 | chili peppers |
| Pound well in mortar. | |
| 1/4 cup | lime juice |
| 3-4 tblsp | fish sauce |
| Add to garlic and chilies. | |
| 300 grams | squid |
| 1/4 cup | thinly sliced shallot |
| 1/4 cup | thinly sliced lemongrass |
| mint leaves for garnish | |
Clean squid, make shallow cuts criss cross pattern. Scald in boiling water.
