Southwest Relish with Pinenuts and Sage

This beautiful relish is a classic complement to Southwest Beef Fajitas (page 92). Like Black Bean Relish (page 30). Corn Salsa (page 24) and Cucumber Salsa (page 24). it would be equally good served with grilled chicken, cold poached lish or seafood, salads or tortillas. | |
6 ounces | tomatillos, chopped (about 1 cup) |
1 medium | tomato, seeded and chopped, (about Vi cup) |
1small | green bell pepper, diced, (about Vi cup) |
1 small | red bell pepper, diced, (about Vi cup) |
1 small | yellow bell pepper, diced, (about Vi cup) |
1/4 cup | pine nuts, (l ounce), toasted (page 19) |
2 cloves | garlic, finely chopped |
1 tablespoon | snipped fresh sage leaves |
1 tablespoon | lemon juice |
1/4 teaspoon | salt |
Mix all ingredients. Cover and refrigerate at least 1 hour.
Yield:4 cups
