This beautiful relish is a classic complement to Southwest Beef Fajitas (page 92). Like Black Bean Relish (page 30). Corn Salsa (page 24) and Cucumber Salsa (page 24). it would be equally good served with grilled chicken, cold poached lish or seafood, salads or tortillas.
    6 ounces  tomatillos, chopped (about 1 cup)
    1 medium  tomato, seeded and chopped, (about Vi cup)
    1small  green bell pepper, diced, (about Vi cup)
    1 small  red bell pepper, diced, (about Vi cup)
    1 small  yellow bell pepper, diced, (about Vi cup)
    1/4 cup  pine nuts, (l ounce), toasted (page 19)
    2 cloves  garlic, finely chopped
    1 tablespoon  snipped fresh sage leaves
    1 tablespoon  lemon juice
    1/4 teaspoon  salt

Mix all ingredients. Cover and refrigerate at least 1 hour.
Yield:4 cups
