Seven Minute Frosting

Yield: 2-9" layers or 1 10" tube

2 | egg whites |
1 1/2 cup | sugar |
1/4 tsp | cream of tartar |
1/3 cup | cold water |
dash | salt |
In a double boiler beat 1 minute with rotary beater. Cook over boiling water beating constantly until peaks form, about 7 minutes. Remove from heat, add 1 tsp vanilla. Beat to spreading consistency.
Yield: 2-9" layers or 1 10" tube
For smaller amount, cook half amount for 4 minutes.
Burnt Sugar Frosting
Substitute 2 tablespoons burnt sugar syrup for cream of tartar
Ivory Frosting
substitute 1/4 cup brown sugar for 1/4 cup white sugar
