Sator fried with Shrimp

Sator is the most liked food in the South. It has a delicious taste with a unique smell. The bean is carved out of the bean pod and eaten fresh or it is also popular to eat it fried or in curry. | |
8 | shrimp |
1/2 cup | minced pork |
2 cups | sator |
15 | red chilies, (prik kee noo) |
10 cloves | garlic |
1 tablespoon | kapee |
1 teaspoon | lime juice |
1 tablespoon | sugar |
1 tablespoon | fish sauce |
3 tablespoons | vegetable oil |
1. Wash the shrimp, peel off the shell, devein and butterfly. Soak in salt water for 5-10 minutes to freshen.
2. Cut each sator bean in half lengthwise and set aside in a bowl of water to cover.
3. Pound together in a mortar the chiiles, garlic, and shrimp paste until roughly broken up.
4. Heat oil in a wok. Add chili paste, shrimp, pork, cook until the pork is no longer pink. Add sator, sugar, lime juice, fish sauce. Adjust seasoning. Serve.
