Refried Black Beans

1 small | onion, chopped, (about 1/4 cup) |
2 | jalapeno chiles, seeded and finely chopped |
2 cloves | garlic, finely chopped |
2 tablespoons | vegetable oil |
2 cans (15 ounces each) | black beans, undrained |
1 | canned chipotle chile in adobo sauce, chopped |
1 teaspoon | ground red chiles |
1/2 teaspoon | salt |
Cook and stir onion, jalapeno chiles and garlic in oil in 10-inch skillet over medium heat until onion is tender. Stir in remaining ingredients; mash beans.
Cook uncovered, stirring occasionally, until thick, about 15 minutes.
