Pickled Red Onions

    1/3 cup  champagne vinegar
    2 tablespoon  sugar
    1 cup  water
    1 1/2 teaspoon  Kosher salt
    1 1/2 teaspoon  coriander seeds
    1 large  red onion, thinly sliced in half moon

Combine in 2 qt saucepan all except onions. Cook over medium heat to a rolling boil, dissolve sugar, lower the heat. Simmer 5-8 minutes. Pour over onions in pint-sized glass container. Cool to room temperature. Store in fridge.
