Pickled Red Onions

1/3 cup | champagne vinegar |
2 tablespoon | sugar |
1 cup | water |
1 1/2 teaspoon | Kosher salt |
1 1/2 teaspoon | coriander seeds |
1 large | red onion, thinly sliced in half moon |
Combine in 2 qt saucepan all except onions. Cook over medium heat to a rolling boil, dissolve sugar, lower the heat. Simmer 5-8 minutes. Pour over onions in pint-sized glass container. Cool to room temperature. Store in fridge.
