Pasta with Carmelized Onion Sauce

1/2 cup | olive oil |
4-6 large | onions, (about 6-8 cups) |
1/2 tsp | salt |
1 medium bunch | argula or spinach, stemmed and minced |
1 cup | crumbled feta or blue cheese |
3/4 lb | pasta, (penne or fusilli) |
1 cup | chopped, toasted walnuts |
Parmesan |
Heat oil in large skillet, add onions saute 15 minutes. Add salt, lower heat simmer another 10 minutes or longer.
Add white wine, simmer uncovered 15 minutes more. Add chopped greens cook 5 minutes. Stir in cheese.
Cook pasta and add to sauce.Serve with walnuts and parmesan.
