7 small | red chili peppers, remove seeds and soak (or 2 dried New Mexico chilies) |
2 piece | kaffir lime rind |
2 | galangal |
1/2 cup | warm water |
1 stalk | lemongrass, botton 6" stalk |
1/4 cup | finely chopped coriander root |
2 tblsp | finely chopped garlic |
1/4 cup | finely chopped yellow onion, (!?) |
2 tsp | coriander seeds |
1 tsp | cumin seeds |
1 tsp | shrimp paste |
Soak and chop finely. If using blender add water.
