    1/2 cup  butter, softened
      margarine, alternative
    1 cup  sugar
    1  egg
    1 cup  molasses
    2 1/2 cup  flour
    1 1/2 tsp  baking soda
    1/2 tsp  salt
    1 tsp  cinnamon
    1 tsp  ginger powder
    1 cup  hot water
      Lemon Sauce
      Garnish lemon rind strips
Beat butter at medium speed gradually add sugar, beating well. Add egg and molasses, mixing well. Combine flour, and next four ingredients. Add to creamed mixture alternating with water, beginning and ending with flour. Mix after each addition. Pour into lightly greased and floured 13x9x2 inch pan. Bake 350 F for 35-40 minutes or until a wooden pick comes out clean. Serve with Lemon Sauce and garnish if desired. Yield: 15-18 servings Lemon Sauce
    1/2 cup  butter
    1 cup  sugar
    1/4 cup  water
    1  egg, beaten
      Juice and rind of 1 lemon

Melt butter in a saucepan; add remaining ingredients, stiring constantly. Cook over medium heat until mixture reaches 160 F. Yield: 2 cups
(about 1 1/2 lbs)
