Marinated Sweet Potatoes and Broccoli

3 med | sweet potatoes, (1 1/2 lbs) |
1 clove | garlic |
3 tbsp | lemon juice |
2 tbsp | red wine vinegar |
1 tsp | salt |
1 tbsp | dry mustard |
1 tbsp | honey |
Black pepper | |
1 large head | broccoli, cut into spears |
Optional: | |
thin slices | green apple |
chopped toasted pecans |
Steam peeled thinly sliced sweet potatoes. Marinate while still hot. Steam brocolli until bright green and tender, rinse under cold water. Lay over to of sweet potatoes. Cover tightly and marinate several hours. Within 15 minutes of serving mix in broccoli and serve garnished.
