Khao Yahm Southern-style Rice Salad

1/2 cup | dried shrimp powder |
3 tblsp | roasted grated coconut |
1/2 cup | samoh |
1/2 cup | bean sprouts |
2 tblsp | long beans |
3 tblsp | sator, cut small |
2 tblsp | lemongrass, cut fine |
1 tsp | kaffir lime leaves, cut fine |

1/2 cup | boodoo sauce |
1 | green mango |
3 tblsp | palm sugar |

1 | red shallot |
2 | sliced galangal |
4 pieces | kaffir lime leaf |
3 tblsp | palm sugar |
1 cup | water |
300 grams | sliced lemongrass |
1. Boil the boodoo sauce with the shallot. Pound together to break up 300 grams sliced lemongrass, 2 slices galangal, 4 torn kaffir lime leaf, and simmer together with 3 tblsp palm sugar and 1 cup water. Strain out the dregs.
