Indian Barley herbal tea (kashaya)

South Indians drink this healing tea throughout the day. The spices work to soothe and heal and the warmth of the drink calms the nerves and restores equilibrium. It is especially comforting if you have a cough, cold or the flu but it also makes an exceptional everyday drink to keep the throat well conditioned.

Preparation time: 5 minutes Cooking time: 15 minutes
3 tablespoons organic barley
1/2 teaspoon cumin seeds
Pinch of powdered cardamom
0.5cm piece of fresh ginger, bruised
570ml water
Jaggery or raw cane sugar to taste
1 Put the barley, cumin, cardamom powder, ginger and water in a large saucepan and bring to a boil.
2 Reduce the heat and simmer for 5 minutes. Strain and add sugar, if desired. Serve hot.
