    42  eggs
    .25 cup  dry milk, ratio 1 part dry milk to 3 parts water
    28  tortillas
    .5 lb  cheddar cheese
    1 bunch  green onion
    2  green bell pepper (medium)
    2  mushrooms 6.5 oz can
    2  jalapeno, garnish
    2  tomato
    3 tbs  olive oil
    1/2 bunch  cilantro
    2 jars  salsa
    16 ounces  sour cream
    14 servings  fruit
    2 cans  black beans, heat and serve on the side

Crack eggs into a bowl and add a little reconstituted milk. Mix well. Chop 1/3 of the green onions and put into the egg mixture with a little bit of cheese. Cook the egg mixture in the griddle until done. You will need to cook egg mixture in small quantities and then put into a bowl or a pan.

Chop bell pepper, mushrooms, green onions and jalapenos to serve as a garnish. Open salsa and sour cream for guests to use. Grate cheese to use as a garnish, warm tortillas and serve.
