Egg Breakfast Burrito

42 | eggs |
.25 cup | dry milk, ratio 1 part dry milk to 3 parts water |
28 | tortillas |
.5 lb | cheddar cheese |
1 bunch | green onion |
2 | green bell pepper (medium) |
2 | mushrooms 6.5 oz can |
2 | jalapeno, garnish |
2 | tomato |
3 tbs | olive oil |
1/2 bunch | cilantro |
2 jars | salsa |
16 ounces | sour cream |
14 servings | fruit |
2 cans | black beans, heat and serve on the side |
Crack eggs into a bowl and add a little reconstituted milk. Mix well. Chop 1/3 of the green onions and put into the egg mixture with a little bit of cheese. Cook the egg mixture in the griddle until done. You will need to cook egg mixture in small quantities and then put into a bowl or a pan.
Chop bell pepper, mushrooms, green onions and jalapenos to serve as a garnish. Open salsa and sour cream for guests to use. Grate cheese to use as a garnish, warm tortillas and serve.
