3 Breakfast - Banana-Nut Pancakes & Fruit

20 | bananas, use 1/3 for pancake batter, 2/3 for eating fresh |
28 servings | pancake mix, add water in a 1:1 pancake mix to water ratio. |
2 ounces | canola oil |
3 cups | syrup, pre-heat? |
4 ounces | butter |
2.5 cup | walnut, must be crushed |
Crush walnuts in bowl (a glass jar works well for crushing). Slice 1/3 of bananas thinly into bowl (add enough water to float banana slices, about half the ratio of water needed), and stir lightly to separate pieces.
Add pancake mix & water in careful proportions (see above ratio)--do not over-water or over-stir! Stir until just moist- some small lumps are OK- over-stirring makes flat, dense cakes!
Oil griddle & heat high. Cook 6 pieces per griddle. Flip only once, when bubbles appear. They are supposed to be golden brown, light & fluffy!
Serve with halved bananas. Serve butter as garnish.
If desired, warm syrup in its container inside of a pot of water on the stove, but don't put the container in contact with the pot bottom if the flame is on.
