Chicken Spinach Parcels

3 oz | chicken fillet |
2 tsp | olive oil |
1 clove | garlic |
1 oz | onion |
1 ball | frozen spinach |
1 tsp | pine nuts |
1 pinch | dried oregano |
2 oz | ham |
1 | tomato, additional |
1. Preheat the oven to 180°C.
2. Heat the oil in a non-stick pan and add the crushed garlic, finely chopped onion and the spinach. Cook over a medium heat until the spinach is soft. Stir in the pine nuts and herbs and remove from the heat.
3. Place the chicken fillet between two pieces of cling film and pound to flatten wilth a rolling pin. Line the chicken fillet with the ham and then fill with the spinach stuffing.
4. Roll up the chicken and secure with a cocktail stick. Place on a baking tray, cover with foil and bake for 10 minutes.
5. Remove the foil and bake for a further 5 minutes, checking the chicken is cooked through before serving.
