Chicken & Walnut Salad

4 oz | chicken fillet |
1 serving | salad leaves |
5 slices | cucumber |
3 | cherry tomatoes |
2 | spring onions |
1 oz | walnuts |
1 tbsp | olive oil |
1 tsp | Dijon mustard |
1. Preheat your oven to 240°C (475°F) or gas mark 9.
2. Marinate the chicken breast in ½ tbsp of olive oil and some salt and pepper.
3. Wrap in tinfoil and cook in a preheated oven for 12-15 minutes.
4. Shred the lettuce; chop the cucumber, tomatoes, spring onion and walnuts.
5. In a bowl add the olive oil, Dijon mustard, salt and pepper and mix.
6. Remove the chicken from the oven and slice.
7. Add all the ingredients to a bowl, add the dressing and toss together.
