Bean & Sweetcorn Bake 3

1 tsp | olive oil |
½ | red onion |
1 clove | garlic |
5 oz | mixed beans |
3 oz | frozen sweetcorn |
1 small tin | canned tomatoes |
½ tsp | honey |
1 pinch | oregano |
½ oz | low fat cheese |
2 tbsp | breadcrumbs |
½ tsp | crushed chillies |
1 serving | mixed salad leaves |
1 tsp | low fat salad dressing |
1. Pre-heat your oven to 180°C (350°F) or gas mark 4.
2. Finely chop the red onion and garlic and grate the cheese.
3. Heat the oil in a small pan and cook the onion for around 4 minutes to soften slightly.
4. Add the garlic and chilli and then stir in the beans, sweetcorn, tomatoes, honey and oregano.
5. Bring to a boil, turn down the heat and simmer for 15 minutes.
6. Pour the mixture into a casserole dish and top with the cheese and breadcrumbs.
7. Bake for 15-20 minutes until golden and heated through and serve with a side of salad leaves and dressing.
