2 tbl | fresh thyme and rosemary chopped coarsely |
5 cloves | garlic chopped coarsely |
1/4 | olive oil |
1 tbl | kosher salt |
1 | lemon zest coarse |
1.5 tsp | dried oregano |
1 tsp | coriander |
1/2 tsp | red pepper flakes |
1/2 tsp | black pepper |
Marinade for 1 to 2 hours. Bake in cast iron at 425 for 30 minutes, baste and and then broil until browned. Add a tablespoon of lemon juice to the pan sauce
