Leche Flan

Leche Flan
    3/4c  sugar
6 eggyolks
    1c  condenses milk
    1c  evaporated milk
    A pinch  o salt
    1/2tsp  lemon zest

Instructions:
Caramelize sugar with 3tbsp of water, then pour into mold

Mix condensed milk, evaporated milk, salt and lemon zest. Gently but thoroughly.

Add egg yolks to the milk mixture.

Pour egg-milk mixture into the molds.

Steam over simmering water for 35-40 minutes.

Let cool before serving. Cheat: stick in the freezer for 15 minutes then transfer in the fridge for another 30minutes
