Cranberry Pork Roast

3 lb | pork roast |
1 can | cranberry sauce, (jellied or whole cranberries) |
1/3 cup | french salad dressing |
1 medium | onion sliced |
3 cloves | crushed garlic |
salt and pepper |
Crush the garlic and rub into roast, along with salt and pepper and place roast in crockpot. Mix cranberry sauce and salad dressing together in a bowl then add sliced onions. Pour cranberry mixture over the roast. Cook on high for 4 hours (or low for 6-8 hrs), slice and serve. You can pour the sauce over the pork, or if you want to thicken it to a gravy consistency, just add a bit of flour and let it cook on high before serving.
I made mashed potatoes and mixed veggies on the side and my family LOVED this. Really simple, really tasty! Enjoy!!
