Flourless chocolate cake

1 cup | butter cut into pieces plus more for the pan |
1/4 cup | cocoa powder plus more for the pan |
1 1/4 cup | heavy cream |
8 ounces | bittersweet chocolate chopped |
5 large | eggs |
1 cup | sugar |
1/2 cup | creme fraiche |
sour cream, alternative | |
1/4 cup | icing sugar plus more for dusting |
1. Heat oven to 350. Butter a 9 inch spring foam pan and dust with cocoa powder.
2. In a med sauce pan heat butter with 1/4 cup heavy cream over med-low heat until the butter is melted. Add the chocolate and stir until melted and smooth, remove from heat.
3. In a med bowl whisk together eggs, sugar and cocoa powder. Whisk in the chocolate mixture
4. Transfer batter to the prepared pan and bake until puffed and set 35-40 min. Let cool in pan for 1 hour. Run a knife around the edge of the cake before unmolding.
5. Using an electrics mixer beat remaining of heavy cream and creme fraiche and icing sugar until soft peaks form. Dust cake with icing sugar and serve with whip cream
