Sponge Drops

1 cup | flour |
1 tsp | baking powder |
1/4 tsp | salt |
2 | eggs |
3/4 | sugar |
1 tsp | vanilla |
1/2 cup | milk |
2 tbsp | jam |
1. Preheat oven to 350
2. Scald milk over low heat
3. Beat eggs until thick and light
4. Gradually add sugar while beating constantly
5. Mix together dry ingredients.
6. Fold dry ingredients into eggs.
7. Fold in vanilla and scalding milk
8. Drop into prepared muffin tins
9. Bake in oven until cooked 15-20 min.
10. Remove from pan and when cool cut out a circle from the top and fill with a little jam.
