Wild Animal Crackers | |
1 1/4 cups | king Arthur Unbleached all-Purpose flour |
1/2 cup | oat flour or finely ground rolled oats |
1/2 cup | sugar |
1/4 c | malted milk powder |
1 teaspoon | baking powder |
1/2 teaspoon | salt |
1/2 cup (1 stick0 soft butter | |
2 teaspoons | vanilla |
1/8 teaspoon | Fiori Di Sicilia or lemon oil |
3 tablespoons | corn syrup |
In a food processor or a medium- sized bowl. Combine the dry ingredients and butter, and pulse or mix until crumbly. Add the flavoring and corn syrup and process or stir just until the dough comes together. Add 1 tablespoon of water if needed to make the dough cohesive. Shape the dough into 3/4 inch balls, and press them into the ungreased animal cracker molds. Place the molds on a baking sheet and bake the crackers in a preheated 350*F oven for 10-12 minutes, until the edges are lightly browned. Cool the crackers in the molds for 5 minutes, then turn them out onto a rack to cool completely; they’ll firm up as they cool.
