Jody's Wild Rice Soup

1cup | uncooked wild rice |
6 cups | chicken brothe |
3 medium | carrots, (chopped) |
1 medium | onion, (finely chopped) |
1 clove | garlic, (minced) |
3 stalks | celery, (chopped) |
2-3 tablespoons | olive oil |
butter, alternative | |
1 pound | bacon, (crisply cooked and crumbled) or 1 pound diced ham |
1 teaspoon | salt |
1/4 teaspoon | pepper |
1 cup | half and half |
11/2-2 cups | shredded cheddar cheese |
Can add chicken breast
1. Rinse wild rice
2. Sauté veggies
3. Add the chicken broth and rinsed wild rice to the pot
4. Add crumbled bacon or ham,salt, and pepper to the pot
5. Heat to boiling then turn down to low heat
6. Simmer for 11/2 hours
7. Just prior to serving, stir in the shredded cheddar cheese until blended. Then add the half and half and warm through. (But do not boil)
8. Serve and enjoy
