Mediterranean Quinoa | |
½ cup | red wine vinegar½ cup chopped cucumber |
2 tsp | olive oil½ cup kalamata olives, pitted and sliced |
2 cloves | garlic, minced½ cup chopped red onion |
1-2 tsp | freshly ground pepper½ cup chopped sun-dried tomatoes |
½ tsp | salt1 cup coarsely chopped spinach |
1 tsp | dried or 1 tbsp fresh basil½ cup chopped fresh parsley |
2 medium | green peppers, chopped4 cup cooked quinoa |
• Make dressing: Wisk together vinegar, oil, garlic, ground pepper, basil and salt.
• In a large bowl, combine the bell peppers, cucumber, olives, red onion, sun-dried tomatoes, spinach and parsley. Mix well.
• Add the dressing to coat.
• Add the quinoa and stir gently.
