Jerk Chicken with Pineapple and Red Pepper

1 | red bell pepper, quartered |
4 | fresh pineapple slices |
1½ Tbsp | Jerk seasoning |
4 large | boneless, skinless chicken thighs, about 1½ lb |
1. OIL the grill grate and heat medium-high.
2. TOSS the pepper and pineapple slices in a medium bowl with canola oil to coat. Remove and sprinkle bell pepper with salt.
3. IN the same bowl, combine jerk seasoning and 1½ tablespoons oil. Add chicken and toss to coat.
4. GRILL chicken, pepper, and pineapple about 10 minutes, turning once.
