Baked Falafel Sandwiches

Falafel: | |
1 15oz can | chickpeas, drained and rinsed |
1/4 cup | minced onion |
2 cloves | garlic, minced |
2 tsp | ground cumin |
1/2 tsp | ground coriander |
1/2 tsp | salt |
1/4 cup | cilantro |
1/4 cup | parsley |
2 tbsp | olive oil |
Preheat oven to 425. Combine all ingredients except 1 tbsp olive oil in food processor. Process for 10 seconds. Scrape down sides of bowl. Process another 10 seconds. Form mixture into 16 falafel balls and brush with remaining tbsp olive oil. Bake for 20 mins. Flip balls and bake additional 20 mins. Tahini Sauce: | |
1/2 cup | tahini paste |
3 tbsp | lemon juice |
3-4 tbsp | water |
Combine ingredients.
Toss together veggies (lettuce, tomatoes, cucumber). Use warm pita. Combine falafel, tahini sauce and veggies in pita.
