Crockpot Beef Roast

2 Tbsp. | Homemade Dry Onion Soup Mix |
7-10 | Golden Potatoes |
1/2 Bag | Baby Carrots |
Water | |
Gravy | |
2 1/4 c. | Warm Liquid from Cooked Roast |
2 Tbsp. | Flour |
Salt & Pepper to Taste | |
Clean potatoes and chop into large chunks of about 1 inch. Cut baby carrots in half. Combine beef roast, potatoes, carrots, and dry onion soup mix in crockpot. Add water to about an inch and a half from the top of the crock pot. Even if the water doesn’t cover everything, that’s fine. The food will condense and shift as it cooks. Cook on low for 10 hours or high for 6 or until meat is fork tender.
Once roast is cooked, remove 2 cups of the liquid and add to a saucepan on the stove. Bring to a simmer. Take another 1/4 c. of the hot liquid from the crock pot and add to a bowl. Whisk this extra liquid with the flour. Once combined, add to saucepan and whisk well. Bring gravy to a boil to thicken. Soak in the praise of your family for your wonderful meal!
