Sandy's Potato Soup

2T | olive oil |
6-8 med | potatoes |
1/3 small | onion |
4 cups | vegetable broth |
1 can | evaporate milk |
1/2 stick | butter |
S&P to taste
Brown potato cubes in olive oil for 5 minutes, add sea salt, until browned.
Add onion, sauté for 1 additional minute
Add broth, scrape pot, simmer for 15 minutes, till potatoes are soft.
Use potato masher to break down mist of potatos.
Add evaporate milk and butter, simmer till butter is melted.
Add pepper to taste
