Basic Marinara Sauce

2 tbsp | olive oil |
1/3 cup | onion, chopped |
2tbsp | garlic |
2 cans | diced tomatoes, no added salt |
2cans | tomato paste |
2 packs | frozen spinach, drained |
1/2 cup | celery |
1/2 cup | carrots |
2 | fresh basil leaves |
1 tbsp | fresh parsley |
1 tsp | dried oregano |
1 | bay leaf |
1/2 tsp | black pepper |
1/4 | kosher salt |
Heat a deep skillet to medium-high. Add olive oil and sauté onion and garlic. Add celery and carrots until soft about 5 minutes. Add other ingredients cook until simmering. Reduce heat to low. Cover and cook for 50 minutes. Add spinach and remove bay leaves.
If sauce is to acidic, add1 tbsp of unsalted butter to round out flavors
