Add shrimp all at once. Be sure they are all under in the liquid.
They are finished JUST BEFORE liquid returns to a boil--do not go by color
This works best when shrimp are frozen.
If u use thawed shrimp it is super important to not let them lay in their liquid.
KEEP ABOUT 1/4 C OF THE LIQUID YOU USED TO COOK THE SHRIMP FOR MAKING YOUR HOT SAUCE!
Drain in colander and cool quickly by layering shrimp with a layer of ice--I use the big pot I cooked the shrimp.
BE SURE TO DRAIN OFF WATER OFTEN TIL SHRIMP ARE COOLED COMPLETELY.
I PUT THE SHRIMP IN BIG BAGGIES AND STAND THEM UP IN A QT SOUP CONTAINER. CUT OFF A CORNER OF THE BAGGIE SO THE LIQUID DRAINS OFF THE SHRIMP INTO THE SOUP CONTAINER AND YOU WILL NEVER HAVE MUSHY SHRIMP!
I leave the shells on to serve them.</IngredientText>

I DUMP AND TASTE BUT THIS IS PRETTY CLOSE!
