Chorizo and Chickpea Soup

Oil | |
Chorizo | |
1 | onion, chopped |
2 | celery sticks, chopped |
3 cloves | garlic, chopped |
1 tin | chopped tomatoes |
1 tin | chickpeas, (or borlotti or cannellini beans will do) |
1 pint | chicken |
vegetable stock, alternative | |
Spinach | |
Salt | |
pepper to taste |
Serves 4
Fry off the chorizo until crisp, put aside.
Fry off celery and onion.
Add garlic then sweat for 10 minutes (low heat with lid on).
Add chorizo, tomatoes, drained peas/beans and stock and cook for 20 minutes.
Add spinach and season before serving.
Serve with a sprinkling of grated parmesan and crusty bread.
