Left over mashed potatoes (you can use instant just to make them thick. About 1 to 1 1/2 cups) | |
1 | egg |
2 tsp | flour |
salt | |
pepper | |
cooking oil |
Mix all in a bowl, add more flour if you need to so it's a thick mixture. Heat skillet on medium with 1/4 cup of cooking oil. When oil is hot, spoon batter into hot oil in small round patties. Cook about 2-3 mins. on each side till golden brown & crunchy
