100g | unsalted butter |
500g | White onions, sliced |
1 | Rosemary sprig |
1Kg | Desiree potatoes |
Melt 1/4 of butter in large pan.
Sweat onions, pinch of salt and rosemary slowly on low heat for about 20mins - lid on.
Preheat oven to 170(fan). Peel pots and slice wafer thin. Immediately transfer to a bowl with the rest of the melted butter. Do not wash pots!
Line ovenproof frying pan. Layer pots neatly in bottom of dish overlapping slightly until about half are used.
Then add the onions and continue to layer the rest of the pots on top.
Set the pan over medium heat to gently colour the bottom of the dish for 5mins.
Transfer to oven and cook for 45-50 mins. Let stand for 10mins then invert and turn out onto a plate. Slice into wedges.
