Lemon Shrimp Stir Fry

1) 1 TBS cornstarch 2) 1/2 tsp. sugar 3) 1/2 tsp. chicken bouillon 4) dash of pepper 5) 1/4 tsp grated lemon peel | |
1/2 cup | water, 4 1/2 tsp lemon juice |
In small bowl , combine the first 5 ingredients. Stir in water & lemon juice; set aside. | |
1/2 lb | uncooked shrimp peeled & deveined |
1 TBS | canola oil |
3/4 cup | sliced celery |
1/2 cup | green & red peppers cut into strips |
1 cup | sliced fresh mushrooms |
3/4 cup | fresh sugar snap peas |
1-3 | green onions, sliced |
1 cup | cooked rice |
In a large wok , stir fry shrimp in oil 1-2 min. or until no longer pink. Remove shrimp w/slotted spoon & keep warm. In same pan stir fry celery & peppers for 2 min. Add mushrooms,sugar snap peas & onions; stir fry for 3-4 min. Or until vegetables are tender- crisp.
Stir cornstarch mixture and add to stir-fry. Bring to boil; cook & sir for 2 min or until thickened. Add shrimp; heat through. Serve with rice. 2 servings
