8 oz | Tri-Color Rotini Pasta, (2 3/4 cups dry pasta) |
1/2 cup | Olive Oil |
1 TBS | lemon zest |
1/4 cup | fresh squeezed lemon juice |
1/2 tsp | salt |
1/2 tsp | pepper |
1 pint | grape tomatoes, cut into halves |
1/2 lb | fresh mozzarella, (pearl size @ Heinen's) |
1/3 cup | chopped red onion |
1/4 cup | fresh basil leaves, chopped |
Cook pasta. Combine olive oil,lemon zest,lemon juice,salt & pepper whisk together until well blended. Add pasta & toss. Add tomatoes,mozzarella,onion
and basil toss lightly. Cover & chill. 4-6 servings
