Yuca con Mojo

Ingredients | |
4 Large pieces | Yuca, (Cassava) root |
1/2 Large | White Onion, sliced |
5-6 | Fresh Garlic cloves |
1/2 Cup | Olive oil, (alternative and most preferred Pork Lard) |
1 | Bitter Orange, (aprox. 1/4 cup) |

Directions
1. Cut Yuca into 3-4 inch portions
2. Peel Yuca root exterior
3. Place Yuca in a pressure cooker and cover with water
4. Seal pressure cooker as per manf. Instructions and bring to boil
5. Once at a boil. Remove from heat and vent pressure cooker
6. Add two (2) cups of cold water to "Shock" the Yuca
7. Stir in 3 Tbs. of Salt
8. Seal pressure cooker and return to boil for 45 min. Or until tender
9. Remove from heat and drain excess water
Mojo
10. In a large pan, heat oil and sweat onions until translucent and soft
11. In a mortar, mash Garlic cloves
12. Add Garlic cloves to oil and Onions and cook until light brown
13. Remove Onion and Garlic from heat add Bitter Orange juice
14, Salt to taste
15. Large Casserole dish place Yuca and add Mojo
16. Cover dish with aluminum foil and place in a warm oven
