Crustless Spinach Quiche *Breakfast to Go*

This recipe is awesome for breakfast on the run. One batch can be divided and last you the whole week! Minutes to Prepare: 5 Minutes to Cook: 25 Number of Servings: 6 Ingredients | |
5 Large | Eggs |
1 10oz Package | Frozen Spinach |
.75 - 1 Cup | Shredded Cheese, (I use a Cheddar blend) |
.5 TSP | Baking Powder |
Directions
Preheat oven to 350. Spray cupcake pan (makes 12) with nonstick spray or use tinfoil liners. Thaw spinach and squeeze out as much water as possible. Place on paper towels and press out remaining water. In medium bowl beat together eggs and baking powder. Add cheese and spinach - mix well. Pour mixture into cupcake pan and bake 25-30 minutes. These are great hot or cold. You can even add more ingredients like peppers, onion, turkey sausage, etc. I put 2 quiches in a ziplock snack bag so they're ready to grab in the mornings. Enjoy!
