    3 cups  unbleached all-purpose flour
    1 3/4 tsp  salt
    1/2 tsp  instant or rapid rise yeast
    1 1/2 cup  water

Whisk dry ingredients then add water until shaggy. Cover bowl with plastic wrap and set aside for 12-18 hours. Heat oven to 450 with a cast iron skillet with lid inside. On floured surface, form dough into ball. Once oven is hot, put dough in skillet, cover with lid and bake for 30 minutes. Remove lid and bake for 15 more minutes.
