Meyer Lemon Pancakes

dry ingredients: | |
2 c. | flour |
1 1/2 Tbl | sugar |
2 tsp | baking powder |
1 tsp | baking soda |
1/2 tsp | salt |
wet ingredients: | |
2 | eggs |
2-1/2 cups | liquid, with approximately 1 c. meyer lemon juice and 1-1/2 cup buttermilk |
finely grated lemon peel from most or all of the lemons | |
1/4 c. | butter, melted |
Combine all dry ingredients in one bowl.
Combine all wet ingredients (plus lemon peel) in second bowl.
Add liquid ingredients to the dry ingredients all at once. Stir just to blend. Batter should be slightly lumpy.
