Warm Macaroni and Mozzarella Salad with Herbs

2 tbsp | olive oil |
2 tsp | red wine vinegar |
2 tsp | freshly squeezed lemon juice |

8 oz (2 cups) | macaroni |
1/2 cup | chopped fresh basil |
1 tbsp | chopped parsley |
1 cup | shredded mozz |
In a small bowl, whisk together olive oil, vinegar, lemon juice, salt and pepper. Set aside.
Cook macaroni according to package instructions. Drain and transfer to medium serving bowl. Add the basil and parsley and half of the dressing. Stir to combine. Let it sit for 1 min to cool slightly, then add the mozz and the remaining dressing. Serve warm.
