Meatball Stew

2 c. | sliced carrots |
2 c. | cubed potatoes |
1 c. | water |
2 tsp | salt |
1 lb | ground beef |
3/4 c. | oatmeal |
1 | egg |
1/2 c. | milk |
1/4 c. | minced onion |
2 tbsp | oil |
1 tbsp | flour |
1 lb | can tomatoes |
1/3 tsp | thyme |
Combine carrots, potatoes, water and 1 tsp salt in the pot
Cook veggies till partially tender (About 10 min)
Combine beef, oatmeal, egg, milk, onion, pepper and remaining 1 tsp of salt
Mix well and shape into meatball, using rounded tablespoon for each meatball
Brown meatballs in oil turning to bron all sides
Remove meatballs from pan
Blend flour into pan drippings
Add tomatoes and thyme to drippings
Cook meatballs, potatoes, and carrots into sauce
Cover and simmer for 20 min.
