Italian Chicken

3 lbs. | chicken |
2 | medium onions - 1/4" slices |
2 cloves | garlic, minced |
16 oz | diced tomatoes |
1 8 oz can | tomato sauce |
1 tsp | salt |
1 tsp | Italian spice |
1/2 tsp | celery seed (or celery salt) |
1/4 tsp | pepper |
2 | Bay leaves |
1/4 c | Sautern wine |
Brown chicken in 1/4 c. of oil. Remove chicken to plate
Cook onions and garlic till tender but not brown.
Combine remaining ingredients, except wine.
Add chicken to pot, cover and simmer for 45 min.
Stir in wine and cook uncovered for 20 min.
Skim off excess fat, and remove Bay leaves.
