Stuffed zucchini

1 medium | or large zucchini cut length wise |
1 lb | ground sausage regular or hot |
1/2 c | Italian bread crumbs |
1/2 c | chopped onion |
Small amount of garlic | |
1/4 c | Parmesan cheese |
Preheat oven to 350. Using large skillet cook zucchini halves in salted boiling water for 10 minutes. Throw seeds away. Scoop out insides leavin 1/2 in base. Brown sausage. Combine all ingredients and fill zucchini. Using 9x13 pan bake 40 minutes. May top with shredded mozzarella if desired.
