Similar to fried, these chicken parts are coated with a zesty, flavorful crust. The good news is that they are just as delicious as fried, but with a fraction of the fat. INGREDIENTS Serves: 4 Prep: 15min Cook: 40min Total: 55min | |
1/4 cup | flour |
1 tablespoon | crab-boil seasoning |
1/2 teaspoon | salt |
2 | eggs |
3/4 cup | cornflake crumbs |
3 tablespoons | grated Parmesan cheese |
1 broiler-fryer chicken (2 1/2-3 pounds), cut into serving pieces and skin removed DIRECTIONS Preheat the oven to 400°F. Coat a baking pan with cooking spray. In a shallow bowl, combine the flour, crab-boil seasoning, and salt. In another bowl, beat the eggs. In a third shallow bowl, combine the cornflake crumbs and cheese. Dip the chicken in the flour mixture, shaking off the excess. Dip into the beaten eggs, then evenly coat with the crumb mixture. Arrange the chicken in the prepared pan.
