Chinese chicken wings

16 whole wings tip removed
    1/3 C  sake
    1/3 C  soy sauce
    4 T  brown sugar
    3 T  mirin
    3 T  oyster sauce
    4 thin slices  ginger
    2 cloves  star anise
    1  dried hot chile
    1  cinnamon stick

Mix everything but wings together in a bowl. Dry sear chicken in pot. Add mixture to pot bring to a simmer. Cook covered for approx 12 min. Uncover and simmer until thean is almost dry, tossing frequently to coat the wings. 10-12 min. Turn up the heat in the last minut to boil fat into other liquids.
