Chinese chicken wings

16 whole wings tip removed | |
1/3 C | sake |
1/3 C | soy sauce |
4 T | brown sugar |
3 T | mirin |
3 T | oyster sauce |
4 thin slices | ginger |
2 cloves | star anise |
1 | dried hot chile |
1 | cinnamon stick |
Mix everything but wings together in a bowl. Dry sear chicken in pot. Add mixture to pot bring to a simmer. Cook covered for approx 12 min. Uncover and simmer until thean is almost dry, tossing frequently to coat the wings. 10-12 min. Turn up the heat in the last minut to boil fat into other liquids.
