Faux Pasta Lasagna

Ingredients
    1 lbs.  ground beef
      chicken, alternative
      turkey, alternative
    1 lbs.  sausage, (beef, chicken or turkey)
    1-2 lbs.  zucchini
      yellow squash
    1 tbs.  olive oil
    2 cups  reduced fat or fat-free shredded mozzarella
    16 oz  pasta sauce, (use your favorite)
    1 medium  white onion, diced
    1 medium  green pepper, diced
3 garlic cloves minced 1 10 oz fresh spinach (1 frozen box) drained
    1 10-oz  fresh broccoli, ( 1 frozen box) drained
1 Tspn oregano, thyme, sage, rosemary
    16 oz  fat-free sour cream, (or skim ricotta)
    1/4 cup  parmesan cheese
    1  egg
      Salt
      Pepper

Preparation
1. Preheat oven to 375 degrees
2. Slice your zucchini into thin slices lengthwise about 1/4 inch thick
Hint: use a mandolin slicer carefully will save time
3, Steam broccoli for 10 min. chop, drain and set aside
4. Wilt spinach, rough chop, drain and set aside
Note: if using frozen broccoli and spinach you must thaw/defrost, drain, chop and set aside

Instructions
1. In a large pan add olive oil sweat onions and add green peppers
2. Stir in minced garlic cook for 2-3 min.
3. Remove sausage casing and brown. Then add meat brown remove excess oil/liquid or lower heat and allow to reduce. Season wit Salt n pepper to taste
4. Combine onions, pepper, garlic, sausage and meat
Note: I like to brown sausage and meat in a single pan to marry all flavors
5. Add pasta sauce and herbs to combined meat mixture simmer 20 min
6. In a bowl, mix sour cream, parm, egg, chopped broccoli and Spinach. Season with salt n pepper to taste.
7. In a 13" x 9" pan, build a foundation of zucchini alternating squash layering
8. Add a layer of the sour cream mixture and vegetable mixture, then a layer of the meat mixture(roughly half)
9. Repeat with another layer of zucchini, squash, sour cream/veggie, and a layer of meat.
10. Cover the top with shredded mozzarella and parmesan cheese.
11. Cover with foil and bake for 45 minutes
12. Remove foil and bake for another 10 minutes until cheese is golden brown
