Mac and Cheese with Cauliflower

1 head | cauliflower, trimmed and cut into florets |
2 tbsp. | olive oil |
1-1/4 tsp. | salt |
1/4 tsp. | garlic powder |
1 slice | white bread |
3 tbsp. | unsalted butter |
1 box | pasta,, (favorite shape) |
2 tbsp. | flour |
2 c. | milk |
1/4 tsp. | smoked paprika |
8 oz. | gouda, shredded |
Directions:
- heat oven to 375 degrees
- toss the cauliflower, oil, 1/4 tsp. salt, 1/8 tsp. garlic powder, and pepper in a bowl
- spread onto a baking sheet and bake for 25 minutes
- take out of oven and reduce heat to 350 degrees
- bring a large pot of salted water to a boil
- pulse the bread in a chopper until crumbs are formed
- melt 1 tbsp. of the butter in a small skillet and add the bread crumbs
- cook for 2-3 minutes
- add pasta to the boiling water and cook for 10 minutes thn drain and return to pot
make sauce:
- melt 2 tbsp. butter
- add flour and whisk for 2 minutes then whisk in the milk and remaining garlic powder, salt, and smoked paprika
- bring to a simmer and cook for 3 minutes, whisking occasionally
- remove from heat and whisk in gouda cheese
- stir cauliflower and sauce into pasta and spoon into a 9x13 dish
- top with bread crumbs and back for 20 minutes
