Baked Potato, Pete's Twice Baked

Ingredients | |
4-6 Medium sized | Potatoes,, (they should all be about the same size) |
5 | Scallions |
1-2 cups | shredded cheese,, (your favorite) |
1 pkg. | Maple Bacon |
3-4 Heaping Tbs. | Sour Cream |
1/4 Cup | Whole milk,, (approximately) |
Salt n Pepper to taste
Preparation
Wash clean the potatoes, wrap in aluminum foil
Preheat oven to 425 degrees Fahrenheit
Fry/bake Maple Bacon Crispy and crumble.
Wash and slice all scallions about 1/8-1/4" set aside
Instructions
1. Place wrapped potatoes in oven and bake for 45 min until tender
2. Remove potatoes from oven and carefully unwrap
3. Place potatoes lengthwise and slice about 1/8" inch lengthwise starting and ending roughly 1/2" from the ends to form your potato "boat".
4. With a spoon carefully scoop out the potato leaving about a 1/4"-1/8" wall.
5. Reserve scooped potato
6. Place all the potato "boats" on a cookie sheet and bake another 20 min. and set aside.
7. Mix reserved potato, cheese, sour cream and whole milk to a rough yet smooth consistency (not too smooth like mashed potatoes).
8. Fold in bacon crumbles and scallions
9. Taste mixture and add salt n pepper to taste
10. Take potato "boats" (cool enough to handle) and stuff with above potato mixture.
11. Bake potatoes for 15 min. Until golden peaks.
