<RecipeText>Preheat oven to 400 degrees F. Lightly cot a 2 qt baking dish with cooking spray. For sauce, in a medium bowl whisk together broth, hoisin sauce, cornstarch, ginger, crushed red pepper, &amp; 1/8 tsp black pepper. Set aside.
Cook chicken in large skillet over medium high heat until lightly brown. Remove from skillet. Add onion, bok choy, celery, carrots &amp; green pepper to the skillet. Cook 3 to 4 minutes or until vegetables start to soften. Add garlic &amp; cook 30 minutes more. Stir in the sauce. Cook &amp; stir about 3 minutes or until sauce is thickened and bubbly. Stir in cooked rice &amp; browned chicken.

Spoon chicken mixture into prepared baking dish. Cover &amp; bake about 20 minutes or until casserole is bubbly. Sprinkle chow mein noodles &amp; cashews over the top. Bake uncovered 4 to 5 minutes more until golden brown. Sprinkle with green onions.
