Lightly cot a 2 qt baking dish with cooking spray. For sauce, in a medium bowl whisk together broth, hoisin sauce, cornstarch, ginger, crushed red pepper, & 1/8 tsp black pepper. Set aside. Cook chicken in large skillet over medium high heat until lightly brown. Remove from skillet. Add onion, bok choy, celery, carrots & green pepper to the skillet. Cook 3 to 4 minutes or until vegetables start to soften. Add garlic & cook 30 minutes more. Stir in the sauce. Cook & stir about 3 minutes or until sauce is thickened and bubbly. Stir in cooked rice & browned chicken. Spoon chicken mixture into prepared baking dish. Cover & bake about 20 minutes or until casserole is bubbly. Sprinkle chow mein noodles & cashews over the top.
